- 1/4 teaspoon ground black pepper

- half of cup pecans, finely beaten
- 5 wedges lemon, for garnish
- five sprigs fresh parsley, for garnish

- Preheat oven to 500 degrees F (260 stages C).
- In a large bowl, blend the cornmeal, salt and pepper. Dip the catfish within the cornmeal combination; coating well.
